Ingredients
- 1 1/2 oz aged rum
- 1/2 oz banana liqueur
- 2 dashes chocolate bitters
- PBee&J hard honey to fill (about 3 oz)
Method
Build rum, banana liqueur and bitters in a double rocks glass over one big clear cube, stir 10 seconds to chill and marry, then top with cold PBee&J and one gentle turn.
Double rocks, single large cube · Garnish: Dehydrated banana chip on the cube
Why it works
Roasted-peanut pyrazines and rum-barrel toast pyrazines are the same class of compound, so peanut and aged rum lock together instantly. Isoamyl acetate — banana's signature ester — is the classic PB-and-banana-sandwich pairing, and cacao bitters add just enough tannin to keep the honey-jam sweetness from going flat.
