Bramble of the Brood

Ingredients

  • 1 1/2 oz London dry gin
  • 3/4 oz fresh lemon juice
  • 1/4 oz honey syrup (2:1)
  • Atomic Berry hard honey to fill (about 3 oz), slow-poured

Method

A bramble build: shake gin, lemon and honey syrup with ice, strain over crushed ice in a rocks glass, then slow-pour Atomic Berry over the back of a spoon so it bleeds down through the ice for the signature marbled look. Note the sour template is trimmed from the standard 2:1:1 — the mead already carries residual honey sweetness, so you subtract syrup rather than add.

Why it works

Juniper's alpha-pinene and dark-berry anthocyanins are the classic bramble bridge — pine resin against jammy fruit. Lemon's citric acid sits sharper and shorter on the palate than the mead's soft gluconic acid, so the drink hits tart up front and finishes on honey.
